Recipe: Comfort Food the Croatian Way

Layered Casserole from Zagorje

Layered Casserole from Zagorje (Zagorski složenac) is a hearty, rustic dish that captures the spirit of Croatia’s northern countryside.

Originating from the lush hills and charming villages of Zagorje, this traditional recipe layers simple, local ingredients—like potatoes, cabbage, smoked meats —into a rich and comforting casserole.

Passed down through generations, it reflects the resourceful, soulful cooking of the region, where meals are crafted to nourish both body and heart. Perfect for family gatherings or cozy evenings, this layered casserole brings a taste of Croatian hospitality straight to your table.

Serves 4
400g meaty smoked sausages
1L water
3 onions
1kg potatoes
3 sour apples
3 eggs (lightly beaten)
salt
lard for greasing white pepper
20ml white wine red
capsicum for garnish

  1. Cook the sausages. Drain them and cut them into 1⁄2cm thick slices. Reserve the liquid.
  2. Slice the onions thinly.
  3. Peel, wash and cut the potatoes into thick slices.
  4. Peel and grate the apples. Lightly beat the eggs and add the lot to the potatoes and onions.
  5. Season with salt and pepper.
  6. Stir in a little water from the cooked sausages.
  7. Grease dish (23cmx30cm) with the lard. Add half of the potato mixture to the dish.
  8. Scatter half of the sausages. Follow with the remaining potato mixture. Finish with the remaining sausages.
  9. Press mixture slightly and sprinkle with the wine. 10. Bake in a pre-heated oven at 200°C for 60 minutes.
